- Uniqueness: Remarkable Longevity. It can develop a high degree of alcohol even if the most modern productions maintain average levels to increase its drinkability. In the reduced alcoholic version, like this one from Assuli, the wine is of great elegance.

The catalyst of Marsala
It is a vine variety probably arrived in Italy and in Sicily from Greece and represents one of the most recognized native Sicilian vine varieties. Trapanese was the area in which it spread most successfully before spreading throughout the island. Due to its characteristics it has been able to undermine very well-known vine varieties existing on the island such as Cataratto. Since the first half of the 1900s, most of the grapes from the Trapani area were Grillo. The success of Grillo is also due to its unusual longevity, its ability to produce wines with high alcohol content and to oxidation, peculiarities that make it ideal for the production of Marsala. We can even say that the Marsala produced in most of Grillo is generally recognized as being of superior quality. Recent genetic analyses have shown a close correlation between Grillo, Cataratto and Zibibbo (Moscato di Alessandria) so close that they can consider Grillo as the result of the crossing between the other two.
Aperitif at sunset
Passing through Trapani, in the summer, towards the sunset you decide to go up to Erice with the cableway and then have dinner in the ancient village. The true Erice climb has an amazing view with the land populated by white houses that point towards the nearby Egadi islands. The red of the sunset makes everything unique and exciting. When you reach the top of the mountain you immerse yourself in the maternal darkness of the old streets. Before sunset, head to a well-known Bar towards Torre del Baglio which has perhaps the most beautiful view of Erice. You want to laser in that terrace and order a glass of fresh Grill which is served combined to small shrimps on a small warm Caponata. Everything is imbued with an ancient elegance. Now with your Grillo wait for the evening before returning to the picturesque streets of Erice.
In the DOC Marsala
Around Trapani, where it enters the DOC Marsala. It is not widespread in the rest of the island. It is one of the true Sicilian white grape varieties.
