Historical notes

Vinified dry, sparkling or passito

It is an ancient native autochthonous vine with particular development in the Marche and subsequently in Abruzzo. The origins are difficult to certify but certainly date back at least to the Roman period. It is known for its resistance to bad weather and to pests and also to the generous yield that it guarantees to producers. For this reason, the farmers have long inserted it in the wines pagadedebit or drives off debts for their certainty of being produced and sold without problems. The productive safety of the Passerina therefore allows many producers to risk more with more complex vine varieties and wines. It is vinified either dry or sparkling wine or passito. For a while, some scholars had assimilated it to the Trebbiano Giallo, a version then denied, while a certain assonance was found with the Bombino Bianco, also a vine belonging to the category of pagadedebit. Nowadays, due to its pleasantness and ease of drinking, it has become very fashionable especially among young people in large cities.

Native stories

An unexpectedly elegant cocktail

In June you are in Ancona for work and before dinner at the bar of your hotel ask for a Sbagliato. The Barman, with international experience but with great love for Italian native wines, decides to prepare your cocktail using Passerina Brut instead of Prosecco or a Sparkling Classic Method provided in the recipe created in Milan. The result is surprising for the very dry note of your drink that gives the Sbagliato an unexpected elegance far from all sorts of cloying.
